Spray non-stick cooking spray on the broiler sheet.
Cut the bacon pieces in half.
Precook the bacon on a broiler sheet or baking pan for 5 mins. Let cool slightly.
Pat the scallops dry with a paper towel to absorb any moisture. There really shouldn’t be too much as you are using our Angelica Fisheries Dry scallops, which have not been soaked in a sodium tripolyphosphate to make them heavier.
Wrap one of the half pieces of bacon around a scallop and insert a toothpick all the way through the scallop to hold the bacon in place. (Tip: Do not use colored toothpicks as the coloring may transfer slightly to the scallop.) Place aside on platter.
Once all the scallops have been wrapped with bacon, transfer them to the broiler pan. It may take one or two batches, depending on the size of your broiler pan.
Drizzle some of the olive oil on each scallop and season with pepper and salt Broil the scallops for 10 minutes or until done. It should be tender and opaque.
