Spray non-stick cooking spray on a roughly 10x6 casserole dish or baking pan
Pat the scallops dry with a paper towel to absorb any moisture. There really shouldn’t be too much as you are using our Angelica Fisheries Dry scallops, which have not been soaked in a sodium tripolyphosphate to make them heavier.
Place the scallops in the baking dish. They should be evenly spaced roughly only one level deep. Slighty crowded is ok.
Put the ritz crackers in a gallon ziplock bag and crush up with a rolling pin.
Sprinkle the crushed cracker mix on the scallops.
Cut up one stick of butter and place around the top of the cracker covered scallops.
Squeeze the lemon over the top of the dish.
Bake for 20-25 minutes at 350”. It may take slightly longer if they are packed closer together. Look for them to be opaque milky white and firm.
